Apulian regional cooking is very rich and characterized by a great variety of genuine ingredients and of traditional recipes which are all different, but all equally delicious!!!
Soooo, you really cannot have a proper wedding in Apulia if your banquet does not include at least some of these culinary gems, don’t you think? I admit that, considering the great number of exceptional available options, the choice is very hard, that’s why I will help you in this difficult task, suggesting you the 5 typical dishes that cannot miss at your wedding reception!
5 typical Apulian must-have dishes for your wedding banquet
All Italian banquets usually start with hors d’oeuvres and ours are no exception! They can be served at table or as a buffet and surely include cheese. We have a great production of different kind of cheese, but today I recommend our typical cacioricotta, made with sheep and goat’s milk, that can be eaten fresh or after a 2- or 3-month maturing.
Among main courses, the most traditional, famous and tasty kind of pasta is obviously orecchiette! They can be served with tomato sauce or other seasonings, but the typical recipe is with turnip tops (orecchiette con cime di rapa): you must definitely try it!
Then, the wedding lunch (or dinner) goes on with a second course either of meat or of fish: if you opt for meat, you might have the tasty Zampina, a long, wound up sausage of mixed meat, enriched with tomato, cheese, herbs and spices. But if you prefer fish, have lu purpu alla pignata (octopus cooked in a terracotta pot) and you will thank me!
Dessert cannot be missing in your wedding reception, of course, and here you’ll be spoilt for choice! One of the best typical sweet is surely the bocconotto, shortcrust pastry filled with jam and almonds and dusted with powdered sugar: simple but incredibly delicious!
